Frozen Strawberry and Yogurt Popsicles


I am always on the "hunt," for easy recipes!! This definitely ranks up there, for sure, with just two ingredients!!! If you don't have a popsicle mold, now is a great time to buy one. In the summer, you can usually find popsicle molds in the dollar-type stores. The large "big box," stores will start marking down their summer items once the back-to-school stuff starts rolling in. This past Thursday, I was in one of my favorite "big box," stores and the piped in music was Christmas jingles. Okay, I think that may be rushing the season just a bit, don't you think?!?!?!



Ingredients

Two 5.3 ounce containers Vanilla Greek Yogurt,
  any brand, I used Chobani
16-ounces fresh strawberries, hulled and sliced

Put the yogurt and sliced strawberries into a blender and puree. Pour the mixture into a popsicle mold and freeze for a minimum of 12 hours. Run under warm water to loosen the molds to remove the popsicles. For breakfast a few days ago, I gave one of these to Dominic. I think he thought it was pretty cool having a popsicle for breakfast!



 Note: I was able to get seven popsicles out of the mold I used.

Strawberry Trifle


When I was trying to tell the hubby that I wanted to make a "trifle," he kept calling it a "truffle." I tried and tried to explain to him that it was two separate things. LOL. Anyways, I was really proud of myself because I barely spent any money on this dessert! I had a digital coupon from Kroger to get a FREE angel food cake and the whipped topping and the strawberries were both on sale!! A "classic," trifle has the cake soaked in sherry or "fortified wine." Um, since Dominic was going to have some of this and he's only 12 years old, that wasn't an option. This trifle had to be "kid friendly!" Even if I hadn't gotten the ingredients for this trifle either free or on sale, it still wouldn't be an expensive dessert to make. I think it's pretty impressive, don't you?

Ingredients

13-ounce angel food cake, cubed
  (about six cups)
8-ounce container of whipped topping
1 pound fresh strawberries, hulled and sliced

In a large glass serving bowl, put two cups of the cubed angel food cake, 1/3 of the whipped topping and 1/3 of the strawberries. Repeat two more times, ending with the strawberries on top. Cover with plastic wrap and put in the fridge 30 minutes. When ready to eat, a large spoon is much better to "scoop," out a piece. Drizzle chocolate syrup on top, if desired!! YUMMY!

Frozen Strawberry Lemonade


In many parts of the country, it is super HOT right now!!  Even in the Midwest (where we live), it has been pretty darn toasty this week :)  If you are outside for any length of time, you will inevitably get thirsty. Don't the above drinks look good?  A certain fast food restaurant that starts with the letter "M" has this beverage on their menu.  Theirs is pretty good, but I like mine better.  An added bonus, you don't have to leave the comforts of your home to go get it!!! Shortly after I took this picture, Lauren drank one and I drank the other. Take it from the two of us,  it was refreshing and really hit the spot!


Ingredients:

2 cups frozen strawberries
1 1/2 cups pink lemonade
2 cups ice cubes

In a blender, put the frozen strawberries and the pink lemonade.  Add 1/2 cup ice cubes and blend.  Keep adding the ice cubes 1/2 cup at a time and blend until all the ice cubes have been incorporated.  I tried to add the ice cubes all at once and my blender let me know it wasn't too pleased!!  Blend until you get the consistency you want  - less blending for thicker, more for a thinner consistency. Serve immediately.
